稳定性 | 淀粉状白色粉末。无臭无味。常温下溶于水,形成胶体状溶液。搅拌下易溶于水,也可先用乙醇湿润后再加入水中。使水溶液成酸性则生成不溶于水的游离酸,粘度降低。对碱较稳定。加入金属盐则形成各种不溶于水的金属盐,因此不适用于强酸性食品。制造时不宜与金属长期接触。水溶液在80℃以上长时间加热则粘度降低。本品水溶液会被大气中的细菌部分分解,使粘度降低。比一般的淀粉难水解。不溶于甲醇、乙醇及其他有机溶剂。1%水溶液的pH 6.7~7.0。水溶液在碱中较稳定,在酸中则较差。 |
