Abstract

The food-derived heterocyclic amine (HCA) carcinogen 2-amino-1-methyl-6-phenyl-1 H- imidazo [4, 5-b] pyridine, PhIP, is often generated in the highest concentration of the HCAs formed during broiling and frying of meat and fish.
