Abstract
Abstract An efficient and friendly method for obtaining hydroxytyrosol from tyrosol, a component of olive waste, is reported. Hydroxytyrosol also may be obtained in the form of enzymatically convertible precursors (eg, hydroxytyrosyl acetate), thus increasing the stability of the active principle.
