Abstract

Abstract Two kinds of disulfide has been isolated from Allium schoenoprasum and their structures established as methyl pentyl disulfide and pentyl hydrodisulfide by spectroscopic and synthetic methods. These compounds, which smell like sweet onions, are important aroma constituents.
