Abstract The highly reactive α-dicarbonyl compounds, glyoxal, methylglyoxal (MGO), and 3- deoxyglucosone, react with the amino groups of proteins to form advanced glycation end- products (AGEs) which have been implicated in diabetic complications, aging, and Alzheimer's disease.
