Inulin is a reserve polysaccharide in plants, mainly derived from plants of 11 families such as Asteraceae, Campanulaceae, Gentianaceae, such as chicory, Jerusalem artichoke, etc. ‌ The molecular structure of inulin is composed of fructose and glucose. It is a linear straight-chain polysaccharide, often with a glucose residue at the end, and the degree of polymerization (DP) is usually between 2 and 60. ‌

Inulin has many health benefits. First, it can control blood lipids, reduce serum total cholesterol and low-density lipoprotein cholesterol, and increase the ratio of high-density lipoprotein to low-density lipoprotein, thereby improving blood lipid status.Secondly, inulin does not cause blood sugar to rise, because it is not hydrolyzed into monosaccharides in the upper part of the intestine, so it does not increase blood sugar levels and insulin content when fasting.

In the food industry, inulin is often used to make instant inulin, which is a uniform multi-porous spherical granule made by boiling granulation technology with good solubility and taste.
