    作品质改良剂,有提高食品的络合金属离子、pH值、增加离子强度等的作用,由此改善食品的结着力和持水性。我国规定可用于乳制品、禽肉制品、冰淇淋、方便面和肉制品,最大使用量5.0g/kg;在罐头、果汁(味)饮料和植物蛋白饮料中最大使用量为1.0g/kg。
    【作用六】
    组织改进剂;乳化剂;稳定剂;螯合剂。单独使用的情况较少,一般与焦磷酸盐和偏磷酸盐混合使用。混合剂主要用于火腿、香肠、鱼糜之类作为保水、嫩化和老残畜肉的软化的组织改进剂等。防止蟹类罐头产生结晶,果胶溶化剂等。
    【作用七】
    在食品工业中用作食品品质改良剂,用于罐头、果汁饮料、奶制品、豆乳。可作Ph调节剂、金属离子螯合剂、粘着剂和膨胀剂等。用于豆类、果蔬罐头,可以稳定天然色素,保护食品色泽;用在肉类罐头中可使脂肪乳化,保持质地均匀;用于肉类食品上可提高持水性,防止肉中脂肪变质。加入啤酒中,能澄清酒液,防止浑浊。
    【作用八】
    用作锅炉用水和工业用水(包括染料生产用水,钛白粉生产用水,印染调浆和染色用水,清洗彩色电影拷贝用水,以及化工用水,药品、试剂生产用水等)的软水剂,工业循环冷却水的水处理剂;还用作缓蚀剂,浮选剂,分散剂,高温结合剂,染色助剂,金属表面处理、防锈剂,洗涤剂助剂,水泥硬化促进剂。铜版纸生产用作浆料扩散剂,以提高渗透力。此外还用于洗涤器皿和化学纤维中用以除去浆粕中的铁离子。石油工业中用于钻探管的防锈和控制石油钻井时调节泥浆的黏度。

六聚偏磷酸钠应贮存在阴凉、通风、干燥、清洁、无毒的库房内。严禁与有毒害物品共贮混运。

稳定性

六聚偏磷酸钠为无色透明玻璃片状或白色粒状结晶。比重2.484(20℃),在空气中易潮解,易溶于水,20℃时每升水溶解973.2克,80℃时每升水溶解1744克,1%溶液的PH值为5.5-6.5左右,不溶于有机溶剂,在中性介质中,水解最终产物为正磷酸盐。 吸湿性很强,露置于空气中能逐渐吸收水分而呈粘胶状物。能与碱土金属化合成可溶性复盐,因此有溶解水垢的功能,是一种良好的软水剂。

5.磷酐法 将黄磷加热熔融后,送入氧化燃烧炉中,用干燥空气中的氧进行氧化燃烧反应,生成中间产品磷酐。再将磷酐与纯碱混合后,经高温聚合反应,骤冷制片即得片状六偏磷酸钠;经粉碎可得粉状六偏磷酸钠。

将磷酸和液体氢氧化钠分别经各自的批量控制器(控制每批液碱、酸投入量,可自动配料,加料速度可在0~20L/min范围内任意调节),按要求加入量连续、准确地加入到中和槽中进行中和反应,反应完成后,pH值达4~4.4,生成磷酸氢二钠,通过中和液泵送入高位槽。将一定量的磷酸氢二钠连续、均匀送到干燥机中干燥,得到规定水分含量的片状磷酸氢二钠,再连续地送入由特殊耐腐蚀材料制成的经柴油燃烧的高温(750~850℃)聚合炉中,使磷酸氢二钠熔融聚合;熔融物料经从聚合炉中连续流出,经骤冷压片即得片状六偏磷酸钠,破碎、筛分得产品。
