以L-组氨酸盐酸盐为原料，碱性条件下加入乙酸酐进行酰化反应，乙醇提取并用过量丙酮沉淀得乙酰-DL-组胺酸；将乙酰-DL-组胺酸在盐酸中回流数小时，乙醇沉淀得DL-组胺酸粗品，再经结晶纯化得纯品。
