焦磷酸二氢二钠用途
用作快速发酵剂、水分保持剂、品质改良剂,用于面包、饼干等焙烤食品及肉类、水产品等
【用途二】
用作发酵粉,用于烘烤食品,控制发酵速度,提高生产强度;用于方便面,缩小成品复水时间,不粘不烂。用于饼干糕点,缩短发酵时间,降低产品破损率,疏松空隙整齐,可延长贮存期。
【用途三】
作品质改良剂,有提高食品的络合金属离子、pH值、增加离子强度等的作用,由此改善食品的结着力和持水性。我国规定可用于苏打饼干,最大使用量3.0g/kg;在面包中最大使用量为1.0~3.0g/kg。

焦磷酸二氢二钠制备
1.干燥聚合两步法将食品级纯碱加入中和器,在搅拌下加热溶解,然后加入食品级磷酸进行中和反应,控制反应终点Ph=4~4.4,生成磷酸二氢钠,将溶液在70~80℃下过滤,把滤液蒸发浓缩,冷却结晶,离心分离,在95℃时干燥脱水成为无水磷酸二氢钠。然后送到箱式聚合炉中加热熔融聚合,控制物料温度在140~200℃进行聚合,转化的酸式焦磷酸钠经粉碎后包装,制得食用酸式焦磷酸钠。其
2.将纯磷酸二氢钠在210℃加热12h,可以得到纯度在97%以上的焦磷酸二氢二钠。再者,为得到大粒结晶,可往40℃的100mL焦磷酸四钠的饱和溶液中加入75mL冰醋酸,之后将温度重新调至40℃,搅拌,晶体大约在30~60min时出现,缓慢长大,结晶持续约30min后,将体系缓慢降至30℃,不能低于此温度,直至结晶完全(大约需2~3h)。减压过滤,用冰水洗涤两次,于100℃干燥。
