蔗糖酶制备

用啤酒酵母(Saccharaomyces cerevisiae)或卡尔伯斯酵母(S.cnrlsbetjgensis)的优良菌株，在含有2%蔗糖的培养基中通气培养，收集所得酵母，加入三氯甲烷、醋酸乙酯、甲苯进行自溶，使蔗糖酶向菌体外溶出，再加氧化铝、高岭土等吸附精制，用50%乙醇使酶沉淀而得。纯酶不稳定，故多加人甘油等稀释。
