• 阿拉伯糖由树胶经水解而制得的一种五碳醛糖。通常在体内呈结合状态存在。为各种树胶、半纤维素、果胶物质等多糖和一些糖苷的组分。有三种旋光异构体，主要为L型，大多数性质相差很小，白色晶体，相对密度1.585，熔点155.5～156.5℃。溶于水和甘油，不溶于乙醇和乙醚。用于医药和作培养基。除可从腺牧豆树的树胶或樱桃树胶水解制得外，也可用右旋葡萄糖酸钙与过氧化氢作用制得。酵母不能使之发酵。
  L-阿拉伯糖是一种常用的食品添加剂，又称果胶糖、L-阿糖、L-阿戊糖，常温下外观为正交棱柱晶体;熔点159.5℃;密度α—D204 1.585，β-D4201.625;旋光度[α]D20+105°(C=3，在水中);十分易溶于水，微溶于乙醇，不溶于乙醇。可由牧豆树胶(mesprite gum)局部水解而得到。或者用4%的乙酸在100℃下处理粉碎的玉米穗轴2小时，分离、水洗，再在100℃下用1%H2SO4处理穗轴，浓缩水解产物，分离，在真空下用木炭处理，通过离子交换脱去矿物质，即得出5～5.5%的L-阿拉伯糖。
