本品为从米曲霉培养液提取的消化酶的混合物,是黄白色粉末,易吸潮,能催化450倍重量的淀粉水解为麦芽糖,使试管内淀粉于5min内液化,30min内糖化。它内含30多种酶,主要是α-淀粉酶和β-淀粉酶,还有纤维素酶、麦芽糖酶、果胶酶、氨基葡萄糖苷酶、胰蛋白酶、肠肽酶、脂肪酶等。微臭,在水中成浑浊的溶液,几乎不溶于乙醚。久贮后糖化力减弱;其溶液热至85℃以上失去糖化力;如有酸或碱存在时,糖化力减弱。它不仅能水解淀粉,而且还能消化蛋白质和脂肪。水解淀粉的能力是麦芽淀粉酶的1.5~2.0倍。最适pH4~6,其活性不受红茶、绿茶、咖啡等影响。
