【用途一】
用作硝化纤维和乙酸纤维的溶剂，也用于香料工业
【用途二】
用作食品加香剂、酒类调味剂、医药中间体
【用途三】
乳酸乙酯是我国规定允许使用的食用香料，常用于调制果香型，乳香型食用和酒用香精。用量按正常生产需要，一般在酒类饮料中1000mg/kg；口香糖中580～3100mg/kg；烘烤食品中7lmg/kg；糖果中28mg/kg；冷饮中17mg/kg。
【用途四】
该品是硝化纤维及乙酸纤维溶剂，也是人造珍珠类的高级溶剂。乳酸乙酯具有酒香香型的香气。用于配制酒用香精及食用香精。

1.将乳酸和过量乙醇在硫酸存在下，加热回流数小时即生成本品。

精制方法：由于乳酸乙酯比较容易水解，故常含有水分、游离的乳酸和乙醇，也可能含有丙交酯和内酯。精制时先用氢氧化钾或消石灰中和游离的酸。洗涤后用无水碳酸钾进行干燥，然后分馏。乳酸乙酯中所含水分可加入苯进行共沸蒸馏除去。为了减少蒸馏时发生分解，可进行减压蒸馏。
