椰子醛

γ-壬内酯是我国《食品添加剂使用卫生标准》规定暂时允许使用的食品香料，主要用于配制桃、樱桃、椰子、杏仁、牛奶、乳脂等香型食用香精。在烘烤食品中使用量为55mg/kg；糖果中33mg/kg；布丁类中28mg/kg；口香糖中15mg/kg；冷饮中14mg/kg；软饮料中11mg/kg。
本品用于配制果香型饮料香精，如椰子香精、苦杏仁香精等，还用作高级化妆品调香用的香料。也是一种有机合成的原料。

1.γ壬内酯天然存在于番茄、朗姆酒、桃、大麦中，但工业上由丙二酸与庚醛为原料制得。
在500mL烧瓶中加入70g三乙胺和52g(0.5mo1)丙二酸，缓缓搅拌使其溶解，在40～50℃下在30min内滴加57g(0.5mo1)新蒸馏过的庚醛。然后在75～85℃下继续搅拌反应1h，直至不再有CO2气体放出。冷却后加入180mL20%的盐酸，静置分层，水层用50mL苯萃取2次。合并苯萃取液和有机层，水洗至中性后用无水硫酸钠干燥。先常压蒸馏回收苯，减压蒸馏，收集130～135℃(666.5Pa)馏分即为壬烯酸，折射率n_D²⁰1.446～1.447，产率约75%。
将32.2g壬烯酸(0.2mol)和4g HY型分子筛置于250mL烧瓶中，在170℃下搅拌反应3h，冷却后滤去分子筛，减压蒸馏，收集123～128℃(800Pa)馏分，即为γ-壬内酯。也可以80%硫酸作为内酯化剂，反应后用水洗涤，再用碳酸钠溶液中和、水洗，最后减压蒸馏得成品。

2.由庚醛与丙二酸反应制得壬烯酸，再内酯化，经萃取、洗涤、蒸馏制得。

3. 烟草：FC，OR，18；由正己醇与丙烯酸或丙烯酸甲酯，在二叔丁基过氧化物存在下加成缩合制得。
