用作有机合成的酯化剂以及摄影药品、医药、印染媒染剂、缓冲剂、化学试剂、肉类防腐、颜料、鞣革等许多方面。可用于制取各种化工产品,如呋喃丙烯酸、醋酸酯和氯乙酸等。该品作为调味料的缓冲剂,可缓和不良气味并防止变色,具有一定的防霉作用。亦可用作调味酱、酸菜、蛋黄酱、鱼糕、香肠、面包、粘糕等的酸味剂。与甲基纤维素、磷酸盐等混合,用于提高香肠、面包、粘糕等的保存性。

乙酸钠制备

1.将三水醋酸钠置于瓷皿中,在120℃下加热至获得干燥的白色物质,得无水醋酸钠。

在有机合成中,例如用无水醋酸钠和碱石灰共熔制备甲烷时,所用无水醋酸钠应在临用前制备。将适量三水醋酸钠放在瓷蒸发皿中,在玻棒搅拌下加热至约58℃时,三水醋酸钠溶解于结晶水中,水分逐渐蒸发后,得到白色固体,此时温度约为120℃。继续加热至固体熔融,但温度不要超过醋酸钠的熔点(324℃),以免醋酸钠分解为丙酮及碳酸钠。在搅拌下稍冷却,趁热在乳钵中研细,并立即储存于密闭容器中备用。

2.用结晶碳酸钠中和醋酸,过滤后蒸发、冷却、结晶,在常温下干燥而成。

3.用硫酸钠和碳酸氢钠处理醋酸钙而成。

4.醋酸钠的生产方法很多,可以用稀醋酸或醋酸钙与纯碱作用而得;也可以用硫酸钠与醋酸钙复分解而得。工业上还常采用药厂和香料厂的下脚料回收醋酸钠。
把628kg稀醋酸倒入反应器中,把200kg纯碱分次加入反应器中。不搅拌,开动引风机抽气。反应平稳后开动搅拌,使纯碱和醋酸充分反应,然后打入蒸发器加热浓缩至液体密度为1.24g/cm3时停止加热。反应液过滤后打入结晶器中,用NaOH调节Ph值为9.2,冷却至35℃结晶。抽去表面母液,甩干结晶得到350kg白色粉末状产品。一次产率约为70%。
