丁香酸是一些蒸馏酒精饮料中存在的苯酚。它也是花青素和其他多酚的微生物(肠道)代谢产物[1]。研究表明,葡萄酒中的酚类物质可能对低密度脂蛋白(LDL)的氧化起到积极作用,这是动脉粥样硬化发展的关键步骤。丁香酸与高抗氧化活性和抑制LDL氧化相关[2]。
