果胶作用
用途二:作增稠剂,我国规定可用于各类食品,按生产需要适量使用。还可作乳化稳定剂。
用途三:果胶广泛用于食品工业,主要用作胶凝剂、增稠剂、乳化剂和稳定剂等。世界上大部分果胶作为胶凝剂用于生产果酱、果冻以及糖果。高甲氧基果胶常用于高糖分、低pH值的产品中作为胶凝剂。低甲氧基果胶可作牛奶和水果点心的理想胶凝剂。另外,果胶在医学、纺织造纸、微生物学等邻域也有广泛的应用。果胶是由植物中提取的天然添加剂,因此安全性比较高。ADI:0-25mg/kg。

果胶制备
1.一般从柑橘皮、苹果皮、葡萄皮、蚕砂和甜菜渣等植物细胞中提取。果胶的提取有酸解法、酶解法和离子交换法,目前比较成熟的是酸解法。酸解法有两种工艺,这里以柑橘皮为原料予以说明。
酸解铝盐沉淀法
橘皮水解液经澄清后用1%的氨水调pH值至3.8,再加硫酸铝钾使果胶沉析出来。分离后用乙醇洗涤3~4次以除去铝盐。最后调pH值至2.8,并甩干、干燥、粉碎得成品。
酸解乙醇沉淀法
先将柑橘皮破碎至2~3mm,用水浸泡40min并煮沸片刻,以杀灭果胶酶。沥干水后的橘皮用10倍0.06mol/L的盐酸,在80℃下浸泡水解1.5h,水解液过滤、澄清后浓缩3%的浓度。在80℃下加活性炭脱色10min,滤液中加入95%的乙醇,使乙醇浓度达到50%。此时,果胶沉析出来,经压滤、乙醇洗涤、真空干燥、粉碎得成品。
如在室温下橘皮先用95%的乙醇浸泡24h提取色素,则水解液可不用活性炭脱色。另外,也可用柠檬酸或草酸代替盐酸。
2.主要采用抽提法。以苹果皮为原料,将其充分洗净,添加1 . 8倍果皮质量的热水,然后加入浓盐酸,在加热下萃取,通过压滤机过滤,最后在真空浓缩罐中浓缩。浓果胶液再加入乙醇、酒石酸,搅拌均匀,经沉淀、压
干、洗涤、真空干燥、粉碎、过筛而得。另外也可在柑橘类果皮等其他含果胶的植物中提取。
