亚油酸含有不饱和双键,非常容易受到自由基攻击和氧化的影响。如果大量产生ROS,身体就不能再有效地去除它们。在这种情况下,ROS可能被释放到细胞外空间,导致对周围细胞和组织的损害。亚油酸是游离脂肪酸的分解产物,与红细胞损伤有关[1]。

1.亚油酸以甘油酯的形式与其他脂肪酸一起存在于动物脂肪中。动物脂肪中的含量一般较低，如牛油1.8%，猪油为6%；若干种植物油中含量较高，如花生油为26%，菜油为15.8%，而大豆所含脂肪酸则以亚油酸为主。大豆油脂肪酸一般组成如下：油酸 15-33%亚油酸 53-56%亚麻酸 5-9%棕榈酸 7-11%硬脂酸 2-6%C20以上酸 0.3-3%大豆油在精炼过程中约有5-10%的油脚和皂脚成生。豆油皂脚中有一半是有用的脂肪酸，而皂脚中脂肪酸又与大豆油所含脂肪酸组成基本上是一致的。因此利用大豆油皂脚提取亚油酸是大豆油综合利用的重要途径。

3. 用硒在200ºC或氮的氧化物处理时，转变为反亚油酸，氢化时先变为油酸和十八烯-12-酸，再变为硬脂酸。
