1.大米经高压糊化,用水稀释冷至50-53℃,接入黑曲霉菌和德氏乳酸杆菌,发酵得到代谢产物乳酸,然后加入磷酸钙中和,得到粗乳酸钙,最后再进行精制,或者用碳酸钙中和稀乳酸液,再将溶液蒸发而制得。精制过程是利用氯化镁和氢氧化钙作用生成的氢氧化镁,它有凝聚作用的性质,使发酵液中的部分杂质和蛋白质凝聚后除去,然后经真空浓缩,结晶,精制而得乳酸钙。(1)发酵法。以碳酸钙为中和剂进行乳酸发酵,用石灰水中和发酵液后经二次结晶,直接生产乳酸钙。发酵原料可用大米糊化糖化液或米粉(玉米粉)双酶水解液,具体参考乳酸发酵。
(2)中和法。在50%的成品乳酸溶液中加入氢氧化钙或氧化钙进行中和反应,然后过滤除去不溶性杂质,再经过冷却结晶、分离、干燥得成品。此法工艺简单,但成本较高。发酵法
